Sweet Chili Sauce

This recipe is a favourite of mine, it makes any meal taste better!

The types of chillis you use are up to you, depending on how hot you want the sauce to be. make sure they are ripe/red otherwise the sauce will turn into a brown colour.

4 Serrano Chillies - minced
4 Thai Chillies - finely chopped
2 T Garlic
2 T Fresh Ginger
1/2 t Sweet Paprika
1 t Salt
1 cup Quality Sugar
1/2 cup Spring Water
1/2 cup Rice vinegar
1 T Fish Sauce
2 limes/lemons juice and rind
3 T Fresh chopped Coriander

mince Serrano chillies, Garlic, Ginger and salt in a mortar and pestle until it's a paste like consistency.
add paste to heavy pan along with Thai chillies, Paprika, Sugar, Water and Vinegar
Simmer for about 40 mins. stirring occasionally with a wooden spoon.
mix 1 T of corn flour or xanthan gum in a little cold water and add to pan, increase heat to return to boil. stir until thick. add more if it isn't thick enough.
Remove from heat and allow to cool a little.
add fish sauce, lime/lemon and coriander. stir until combined.
bottle in sterilised jars/bottles

ENJOY!!!
